Superbowl Sunday

Oh, is it really Superbowl Sunday today?! 

I guess I hadn't been paying too much attention, 
every since my dear Bears were knocked out...
Not the best season guy! 
I still love you....
And, nevertheless, I will watch today to see all the commercials, 
SO there must be some yummy snacking food and some friends over to watch! 
On the Menu today is: 

Easy Spinach Dip 
yum.

Ingredients

  •  2 teaspoons olive oil, plus more for baking dish
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 2 pounds spinach, cleaned, trimmed, and coarsely chopped
  • 1/2 cup milk
  • 6 ounces reduced-fat bar cream cheese
  • 3 dashes Worcestershire sauce
  • 3 dashes hot sauce, such as Tabasco
  • 3/4 cup shredded mozzarella
  • Coarse salt and ground pepper
  • Baguette slices, breadsticks, or crackers, for serving

Directions

  1. Preheat oven to 425 degrees. In a Dutch oven or large pot, heat oil over medium. Add onion and garlic; cook until lightly browned, 5 to 8 minutes.
  2. Add spinach in two additions, letting the first batch wilt before adding the next; cook until completely wilted, 5 to 8 minutes. Transfer to a colander; drain, pressing to release all excess liquid.
  3. In the same pot, warm milk over high heat. Whisk in cream cheese until melted, about 3 minutes. Add spinach, Worcestershire sauce, hot sauce, and 1/4 cup mozzarella; stir to combine. Season with salt and pepper. Pour into a lightly oiled 1 1/2-quart shallow baking dish; sprinkle with remaining 1/2 cup mozzarella.
  4. Bake until bubbly and golden brown, 20 to 25 minutes. Serve hot with accompaniments, as desired.

Bacon Double Cheeseburger Dip
Bacon Double Cheese Burger Dip


Ingredients
  • 1/2 pound ground beef
  • 6 strips bacon, cut into 1 inch pieces
  • 1 small onion, diced
  • 1 clove garlic, chopped
  • 4 ounces cream cheese, room temperature
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 cup mozzarella, shredded
  • 1/2 cup cheddar cheese, shredded
  • 1 tablespoon worcestershire sauce
  • 2 tablespoon ketchup

Directions
        Cook the ground beef in a pan over medium heat, set it aside and drain the grease from the pan.
Cook the bacon in the pan until crispy, about 6-10 minutes, set aside and drain all but a tablespoon of the grease.
Add the onion and saute until tender, about 5-7 minutes.
Add the garlic and saute until fragrant, about a minute.
Mix the ground beef, bacon, onions and garlic, cream cheese, sour cream, mayonnaise, mozzarella, cheddar, worcestershire sauce and ketchup and pour it into a baking dish.

Bake in a preheated 350F oven until the top starts turning a light golden brown and then sides are bubbling, about 20-30 minutes.

Frito Pie Chili
Frito Pie
One from my kitchen! 

Ingredients
1 lb. lean ground beef
1 can (16 oz) chili beans
1 can (8 oz) tomato sauce
1 can (15 oz) diced tomatoes
1 envelope low sodium taco seasoning
1 cup shredded cheddar cheese (2% fat)
3 1/2 cups corn chips (Frito's)
1 1/4 cup fat free sour cream

DirectionsCook ground beef until meat is browned; drain.


Stir in beans, tomato sauce, taco seasoning mix and 1/4 c. of cheese. 
Sprinkle 1 cup corn chips in bottom of 8x8 baking dish or 9x13 dish. 
Cover with chili. Bake at 350 for 20 minutes. 
Spread sour cream over chili. 
Top with remaining corn chips and cheese. 

Bake 4-5 minutes longer.

Makes 6 to 8 servings
